A truly Island-crafted whisky from start to finish. For the 2nd release in DEVINE’s cask finish series, we selected a single cask of our flagship Glen Saanich Single Malt Whisky for finishing in a french oak wine cask previously used to mature the Ovation port-style fortified wine from our friends at Unsworth Vineyards in the Cowichan Valley on Vancouver Island.
The anchor of this expression is of course our Glen Saanich, our terroir-focused single malt whisky expression crafted from 100% locally grown and malted barley. For the finishing cask, we were fortunate to source a wine cask from our friends at Unsworth Vineyards that was used to mature their coveted Ovation port-style fortified wine. This wine is crafted from the oldest block of Marechal Foch grapes on their property and is blended in a Solera meaning there are 10+ vintages of wine in each bottling.
The coastal malt-forward character of our flagship Glen Saanich is enhanced here by the bolder character of the 'double-oak' cask used for primary maturation. This marries beautifully with the french oak finishing cask which adds a depth of flavour with notes of dried cherry and raisin coming from its use in the Ovation Solera.
The result is a deeper, richer whisky expression which has all the malty, biscuity, caramel, and coastal air influences you've come to expect from our Glen Saanich, rounded out by floral and fruity aromas, and dark cherry and raisin flavours with a warm, lingering finish.
