The Product
A terroir focused and authentically grain-to-glass single malt whisky. Made from the finest barley grown and malted just minutes from our distillery on the Saanich Peninsula.
The Process
We mill, mash, ferment, and distill twice. Primary maturation is a minimum of 3-1/2 years in first-fill Bourbon casks followed by secondary maturation and finishing for 6 months in new charred American oak casks.
Tasting Notes
The smooth malt-forward backbone of the flagship whisky is enhanced with more prominent notes of vanilla, oak, and barrel char from the finishing cask.
