“Hawaii of the North” A Lilikoi Margarita

Level of Complexity: Home Bartender Friendly (but set aside some time to juice the passionfruit, which can be done in advance)

We’ve been dreaming of this cocktail since our last trip to Hornby Island, a place lovingly coined Hawaii of the North. Expansive white sand beaches and azur waters call for a thirst quencher -> Enter the Lilikoi Margarita! Often subbed for a tequila blanco, our Honey Shine Silver makes a perfect base spirit alongside the Manitou orange sumac liqueur plus a burst of fresh tropical passionfruit (or lilikoi as referred to in Hawaii) to concoct this BC take on a lilikoi marg. Shake out your towel and shake up this cocktail to accompany all the summer island-hopping adventures.

Ingredients

  • 1.5 oz DEVINE Honey Shine Silver
  • 0.5 oz Legends Manitou Orange & Sumac Liqueur
  • 1 oz Lime Juice
  • 0.5 oz Honey Simple Syrup ( 2 parts honey dissolved in 1 part hot water)
  • 1-1.5 oz Fresh Passion Fruit juice * = approx. 2 yellow or 4 purple passionfruit
  • Lime Slices for garnish and rimming
  • Sea Salt Rimmer

Method 

Find the heaviest 4 passionfruit you can, cut in half and carve out the pulp into a strainer over a glass. Press pulp down with a ladle to squeeze out the juice from the pulp. Set juice aside. Rim your glass with a lime wedge and press the rim onto plate of salt. Fill glass with crushed ice and set aside. Add the Honey Shine Silver, Manitou, lime juice, passionfruit juice and simple syrup to a shaker. Shake over ice then strain into ice filled glass. Garnish with lime and cheers to the natural beauty offered by our very own Hawaii of the North.
