Level of Complexity: Cocktail Connoisseur
This is a light gin fizz essentially, refreshing but bitter at the same time. It can be difficult to whip the egg whites up enough for maximum foaminess, so shake super hard with this one. If you can master a gin fizz then any egg white cocktail will be a breeze.
If you want to make this egg free - Ms Better’s Bitters Miraculous Foamer is a great egg white alternative.
- 1 oz DEVINE Dutch Courage Barrel-Aged Gin
- .5 oz Cynar
- .5 oz Tofino Absinthe
- 1 oz Grapefruit Juice
- .25 oz Lemon Juice
- .25 oz Turbinado Syrup
- 1 oz Egg White
- 2 oz Soda Water
Add everything except the soda to a shaker then dry shake. Top with ice, wet shake and double strain back in to the shaking tin. Add the soda and dry shake again (hold the tins tightly so they don’t explode with the carbonation) then pour in to a Collins glass. The cocktail should fill the glass so make sure you have a glass the fits the drink. If you want to try and raise the cocktail up out of the glass (Ramos gin fizz style) then simply pour a little more soda slowly in to the glass. Pop a straw in there and sip away!
