Level of Complexity: Home Bartender Friendly (but set aside ~5 hours for raspberry syrup, which can be made in advance)

This is a great spring or summer classic cocktail. It predates prohibition and was named after the men's club from which is was first enjoyed in Philadelphia.

Ingredients

  • 2 oz DEVINE Genever Gin
  • .75 oz raspberry syrup*
  • .75 oz lemon juice
  • 1 egg white
  • 3 raspberries for garnish

Method 

Add everything to a mixing tin and dry shake. Add ice and wet shake until the tins are ice cold. Double strain in to a chilled couple glass. Garnish with raspberries.

 

*Raspberry Syrup: Put one pack (1/2lb) of fresh local raspberries in a pot and cover with 1.5 cups of cane sugar. Lightly massage in and leave for 5 hours. This breaks the raspberries down and extracts a crazy amount of flavour. After 5 hours add a cup of water and bring to a light simmer to dissolve the sugar. Take off the heat and leave to cool. Strain through a fine sieve and store in the fridge.
