Introducing ‘Einkorn Whisky’
Our Einkorn Whisky is the first of 4 anticipated releases as a part of our new ELEMENTAL SERIES of whiskies where initially, each heritage grain found in our Ancient Grains Whisky namely, spelt, emmer, einkorn, and khorasan, will be featured and explored as its own whisky expression.
To kick off the first expression in this series, we want to unearth the past and share a brief history of this ancient and noble grain - Einkorn.
Einkorn has a rich and storied past that dates back thousands of years. It is believed to be the earliest cultivated grain in human history can be traced back to 30,000 years ago while origins of domestication is believed to be in the Fertile Crescent region around 10,000 years ago. In 1991, archaeologists were excited to verify early cultivation when 2 German hikers discovered a body protruding from a melting glacier in the Ötzal Alps. Preserved for 5,300 years in the belly of Ötzi the iceman, lovingly named after the region in which he was found, was, among other things, einkorn wheat.
Unlike other forms of wheat, Einkorn is the only variety of wheat that has not been hybridized. While einkorn is low yielding, it can survive in dry, poor soil conditions where other wheat varieties will not. Its resilience and adaptability to various climates made it a stable food source for early civilization.
Today, Einkorn's popularity is driven by its nutritional value, lower gluten and a non-gmo status compared to hybridized varieties. Its primitive, deep, nutty characteristics are often discovered in baking, but in our case, it is one of the many layers showcased in our Ancient Grains Whisky.
